While the original Serbian Svadbarski kupus is traditionally made with sauerkraut and pork, this Dorset-inspired cabbage stew takes a different approach. Instead of sauerkraut, fresh cabbage is used to maintain its crispness. The meat selection can vary, but for a Dorset twist, we recommend using locally sourced beef or lamb. 1.Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and sauté until they become translucent.

3.Stir in the tomato paste, smoked paprika, dried thyme, bay leaf, salt, and pepper. Cook for a minute to release the flavors.

4.Add the shredded cabbage, carrots, and potatoes to the pot. Mix well to combine all the ingredients.

5.Pour in the beef or vegetable broth, ensuring that the ingredients are fully submerged.

6.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 1.5 to 2 hours, or until the meat is tender and the flavors have melded together.

7.Adjust the seasoning if needed. Remove the bay leaf before serving.
