Preparation

    Rinse the adzuki beans under cold water and soak them overnight.

    Drain the soaked beans and transfer them to a large pot.

    Add water and pandan leaf (if using) to the pot and bring to a boil.

    Reduce the heat to low and simmer for about 1 hour or until the beans are tender.

    Remove the pandan leaf and add rock sugar to the pot. Stir until the sugar is dissolved.

    Use an immersion blender or transfer the soup to a blender and blend until smooth.
