Ingredients
In the original Chinese version of Sweet Soup, ingredients like red beans and lotus seeds are commonly used. However, in this Algerian adaptation, we replace these ingredients with dates and almonds to cater to the flavors and preferences of Algerian cuisine. The spices used in the Algerian version also differ, with the addition of cinnamon and cardamom to infuse warm and comforting flavors. Preparation

1.In a large pot, combine the dates, almonds, water, sugar, cinnamon stick, and cardamom pods.

2.Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.

3.Remove the pot from the heat and discard the cinnamon stick and cardamom pods.

4.Using an immersion blender or a regular blender, blend the soup until smooth and creamy.

5.Return the soup to the pot and stir in the orange blossom water.

6.Place the pot back on the stove and simmer for an additional 5 minutes.

7.Remove from heat and let the soup cool slightly.

8.Serve the Sweet Soup warm or chilled, garnished with toasted almonds.
