Preparation

1.In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

2.In the same pot, add the chopped onion, carrots, and potatoes. Sauté until the vegetables are slightly softened.

3.Add the minced garlic, ground cumin, ground coriander, paprika, and harissa paste to the pot. Stir well to coat the vegetables with the spices.

4.Return the browned beef cubes to the pot and add the diced tomatoes and beef broth. Season with salt and pepper to taste.

5.Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the beef is tender and the flavors have melded together.

6.Serve the soup hot, garnished with fresh parsley.
