Preparation

1.Preheat the oven to 180°C (350°F).

2.In a small bowl, combine the olive oil, ground cumin, ground coriander, paprika, saffron threads, salt, black pepper, minced garlic, and lemon juice.

3.Rinse the chicken and pat it dry with paper towels.

4.Rub the spice mixture all over the chicken, making sure to coat it evenly.

5.Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 75°C (165°F).

6.Baste the chicken with the pan juices every 30 minutes to keep it moist and flavorful.

7.Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.

8.Garnish with freshly chopped parsley and cilantro before serving.
