Heat the olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
  2. 2.
In the same pot, add the onion and garlic. Sauté until the onion becomes translucent.

  7. 7.
Serve the Apohtin Delight hot, garnished with fresh parsley.

Treat your ingredients with care...

  • Lamb — For the most tender results, choose boneless lamb shoulder or leg. Trim any excess fat before cubing the meat.
  • Dried oregano and thyme — If you prefer a stronger herbal flavor, you can increase the amount of dried oregano and thyme to 2 teaspoons each.

Tips & Tricks

  • For an extra burst of flavor, marinate the lamb in olive oil, garlic, and lemon juice for a few hours before cooking.
  • If you prefer a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
  • Serve Apohtin Delight with warm crusty bread to soak up the delicious sauce.
  • Leftovers can be refrigerated for up to 3 days and taste even better the next day as the flavors continue to develop.
  • This dish pairs well with a refreshing Greek salad on the side.
