Preparation

1.Heat the olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.

2.In the same pot, add the onion and garlic. Sauté until the onion becomes translucent.

3.Add the carrots, potatoes, red bell pepper, and zucchini to the pot. Cook for a few minutes until the vegetables start to soften.

4.Return the lamb to the pot and add the diced tomatoes, tomato paste, dried oregano, dried thyme, bay leaf, salt, and pepper. Stir well to combine.

5.Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.

6.Remove the bay leaf and adjust the seasoning if needed.
