Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

2.Add the chicken pieces to the pot and cook until browned on all sides.

3.In a small bowl, mix together the cumin powder, coriander powder, ginger powder, and turmeric powder. Sprinkle the spice mixture over the chicken and stir well to coat.

4.Pour in the chicken broth and season with salt to taste. Bring the mixture to a boil, then reduce the heat to low and simmer for about 45 minutes, or until the chicken is cooked through and tender.

5.While the stew is simmering, prepare the rice. Rinse the Bhutanese red rice under cold water until the water runs clear. In a separate pot, bring the water to a boil and add the rice. Reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is tender and the water is absorbed. Fluff the rice with a fork.
