Preparation

1.Rinse the rice under cold water until the water runs clear. Drain well.

2.In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

3.Add the rice to the saucepan and stir to coat it with the oil. Cook for 2-3 minutes, until the rice is slightly toasted.

4.Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

5.In a separate saucepan, heat the Devonshire cream over low heat until warmed through.

6.Once the rice is cooked, remove it from the heat and let it sit, covered, for 5 minutes.

7.Fluff the rice with a fork, then pour in the warmed Devonshire cream. Stir gently to combine.

8.In the same saucepan used for the rice, heat the olive oil over medium heat. Add the carrot, bell pepper, and frozen peas. Sauté for 5-7 minutes, until the vegetables are tender.

9.Add the sautéed vegetables to the rice and gently fold them in.

10.Season with salt and black pepper, and garnish with fresh parsley. Serve hot.
