Ingredients

The original Béarnaise sauce is a classic French sauce made with butter, egg yolks, white wine vinegar, shallots, and tarragon. In this Nigerien adaptation, we incorporate the flavors of Nigerien cuisine by adding ground peanuts, cayenne pepper, and a touch of garlic. Treat your ingredients with care...

  • Ground peanuts — Make sure to use unsalted ground peanuts for the best flavor. If you can't find ground peanuts, you can grind roasted peanuts in a food processor until finely ground.

Tips & Tricks

  • For a milder spice level, reduce the amount of cayenne pepper.
  • If the sauce becomes too thick, whisk in a tablespoon of warm water to thin it out.
  • To add a smoky flavor, you can substitute smoked paprika for the cayenne pepper.
