We replace the red wine with a combination of coconut milk and tangy lime juice, adding a refreshing twist to the dish. Preparation

1.In a large bowl, combine the beef stew meat, Caribbean jerk seasoning, and flour. Toss until the meat is well coated.

2.Heat a large pot over medium-high heat and add a splash of oil. Brown the beef in batches until it is nicely seared on all sides. Remove the beef from the pot and set aside.

3.In the same pot, add the minced garlic and chopped onion. Sauté until the onion becomes translucent and fragrant.

4.Return the beef to the pot and add the coconut milk, lime juice, beef broth, tomato paste, bay leaves, salt, and pepper. Stir well to combine.

5.Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for about 2 hours, or until the beef is tender.

6.Add the sliced carrots, cubed potatoes, and sliced red bell pepper to the pot. Stir to incorporate the vegetables into the sauce.

7.Cover the pot again and let it simmer for an additional 30 minutes, or until the vegetables are cooked through.

8.Remove the bay leaves and adjust the seasoning if needed.
