In this Caribbean adaptation of Uunijuusto, we infuse the traditional Finnish cheese dish with the flavors of the Caribbean. We incorporate tropical ingredients such as coconut, lime, and Caribbean spices to give the dish a distinct Caribbean twist. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large mixing bowl, combine the coconut milk, whole milk, sugar, lime juice, lime zest, nutmeg, cinnamon, allspice, and salt. Mix well until the sugar is dissolved.

3.Add the grated cheese to the milk mixture and stir until well combined.

4.Gradually add the beaten eggs to the mixture, stirring continuously.

5.Stir in the melted butter until fully incorporated.

6.Grease a baking dish with butter or cooking spray.

7.Pour the cheese mixture into the prepared baking dish and smooth the top with a spatula.

8.Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the center is set.
