1.Preheat the oven to 325°F (160°C).

2.In a large oven-safe pot, heat 2 tablespoons of olive oil over medium-high heat.

3.Season the beef cubes with salt and pepper, then sear them in the pot until browned on all sides. Remove the beef from the pot and set aside.

4.In the same pot, add the remaining 2 tablespoons of olive oil and sauté the shallots, garlic, and carrots until they begin to soften.

5.Return the beef to the pot and pour in the red wine, beef broth, and tomato paste. Stir well to combine.

7.Cover the pot and transfer it to the preheated oven. Let it cook for 2 to 2.5 hours, or until the beef is tender.
