Preparation

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

2.In a large pot, melt the butter over medium heat. Add the sliced onions and cook until golden brown.

3.Add the minced garlic and ginger paste to the pot and cook for another minute.

4.Add the chicken pieces to the pot and cook until they are browned on all sides.

5.In a separate small bowl, dissolve the saffron strands in a tablespoon of warm water.

6.Add the soaked and drained rice to the pot with the chicken. Stir well to combine.

7.Pour in the chicken stock, saffron water, heavy cream, and all the spices (cardamom, cinnamon, cloves, nutmeg). Season with salt to taste.

8.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 15-20 minutes, or until the rice is cooked and the flavors have melded together.

9.Remove the pot from heat and let it rest, covered, for 5 minutes.

10.Fluff the rice with a fork and garnish with fresh cilantro leaves before serving.
