Ingredients
While the original bolinhos de chuva are deep-fried dough balls coated in sugar and cinnamon, these Ceredigion-inspired raindrop cakes take a different approach. Instead of dough, we use a jelly-like mixture made from agar agar, a natural gelling agent derived from seaweed. 1.In a saucepan, combine the water, elderflower cordial, honey, and lemon juice. Bring to a gentle simmer over medium heat.

2.Sprinkle the agar agar powder over the liquid mixture and whisk continuously for 2-3 minutes until the powder is fully dissolved.

3.Remove the saucepan from heat and let the mixture cool for 5 minutes.

4.Pour the mixture into raindrop-shaped silicone molds or small round molds.

5.Allow the cakes to set at room temperature for about 30 minutes, then transfer them to the refrigerator and let them chill for at least 2 hours, or until fully set.
