Preparation

  1. 1.
In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for 5 minutes until frothy.
  2. 2.
In a large mixing bowl, combine the flour and a pinch of salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.
  3. 3.
Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
  4. 4.
Preheat the oven to 180°C (350°F).
  5. 5.
For the sweet filling, mix the ground walnuts, honey, and cinnamon in a bowl. For the savory filling, combine the cooked spinach, feta cheese, and minced garlic.
  6. 6.
Roll out the dough into a thin rectangle. Spread the desired filling evenly over the dough.
  7. 7.
Starting from one of the longer sides, tightly roll the dough into a spiral shape.
  8. 8.
Place the rolled Budla on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.
  9. 9.
Remove from the oven and let it cool for a few minutes before slicing and serving.

Treat your ingredients with care...

  • Ground walnuts — Make sure to use finely ground walnuts for a smooth and even texture in the sweet filling.
  • Feta cheese — Crumble the feta cheese into small pieces for easy incorporation into the savory filling.

  • Serve the Budla warm for the best taste and texture.
