Preparation

1.In a bowl, combine the soy sauce, sesame oil, honey, lime juice, minced garlic, New Mexican chili powder, cumin, smoked paprika, black pepper, and cayenne pepper. Mix well to create the marinade.

2.Place the thinly sliced beef in a large ziplock bag and pour the marinade over it. Seal the bag and massage the marinade into the beef, ensuring it is evenly coated. Marinate in the refrigerator for at least 2 hours, or overnight for maximum flavor.

3.Heat a large skillet or grill pan over medium-high heat. Add the sliced onion and cook until softened and slightly caramelized.

4.Remove the beef from the marinade, allowing any excess marinade to drip off. Add the beef to the skillet with the onions and cook for 2-3 minutes per side, or until cooked to your desired level of doneness.

5.Sprinkle the chopped green onions and fresh cilantro over the cooked beef. Serve hot with steamed rice or tortillas.
