Preparation

  1. 1.
In a bowl, combine the soy sauce, sesame oil, honey, lime juice, minced garlic, New Mexican chili powder, cumin, smoked paprika, black pepper, and cayenne pepper. Mix well to create the marinade.
  2. 2.
Place the thinly sliced beef in a large ziplock bag and pour the marinade over it. Seal the bag and massage the marinade into the beef, ensuring it is evenly coated. Marinate in the refrigerator for at least 2 hours, or overnight for maximum flavor.
  3. 3.
Heat a large skillet or grill pan over medium-high heat. Add the sliced onion and cook until softened and slightly caramelized.
  4. 4.
Remove the beef from the marinade, allowing any excess marinade to drip off. Add the beef to the skillet with the onions and cook for 2-3 minutes per side, or until cooked to your desired level of doneness.
  5. 5.
Sprinkle the chopped green onions and fresh cilantro over the cooked beef. Serve hot with steamed rice or tortillas.

Treat your ingredients with care...

  • Beef — Choose thinly sliced beef sirloin for tender and quick cooking. If you can't find pre-sliced beef, freeze a piece of beef for 30 minutes to make it easier to slice thinly.
  • New Mexican chili powder — Adjust the amount of chili powder according to your spice preference. Add more for extra heat or reduce for a milder flavor.
  • Lime juice — Fresh lime juice adds a tangy and citrusy element to the marinade. Use freshly squeezed lime juice for the best flavor.

Tips & Tricks

  • For a smokier flavor, grill the marinated beef instead of cooking it in a skillet.
  • Serve the New Mexican Bulgogi with warm tortillas for a delicious fusion of Korean and Mexican cuisine.
  • If you prefer a milder spice level, reduce the amount of cayenne pepper in the marinade.
  • Make extra marinade and reserve a portion to use as a dipping sauce for the cooked beef.
  • Garnish the dish with sliced jalapenos for an extra kick of heat.
