Preparation

1.In a large mixing bowl, combine the flour, granulated sugar, and salt for the pastry. Add the cold cubed butter and use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.

2.Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.

4.On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch. Cut out circles slightly larger than the muffin tin cups and press the dough into each cup, forming a pastry shell.

5.In a separate bowl, whisk together the melted butter, brown sugar, eggs, maple syrup, vanilla extract, and salt until well combined.

6.Optional: Sprinkle chopped pecans into the bottom of each pastry shell.
