Preparation

  1. 1.
In a mixing bowl, combine the ground almonds, powdered sugar, candied orange peel, orange blossom water, and egg white. Mix well until a smooth dough forms.
  2. 2.
Roll out the almond paste on a surface dusted with powdered sugar to a thickness of about 1/4 inch.
  3. 3.
Cut out small oval shapes from the almond paste using a calisson mold or a knife.
  4. 4.
Place the almond paste ovals on top of the dough mixture and press gently to adhere.
  5. 5.
Use the calisson mold or a knife to cut out the calisson shapes.
  6. 6.
In a separate bowl, mix the white icing sugar with a few drops of water until you achieve a thick, smooth consistency. Add food coloring if desired.
  7. 7.
Dip each calisson into the icing, ensuring it is fully coated. Place them on a wire rack to dry.
  8. 8.
If desired, decorate the calissons with edible gold leaf before the icing sets.
  9. 9.
Allow the calissons to dry completely before serving.

Treat your ingredients with care...

  • Almond paste — Ensure the almond paste is pliable and easy to roll. If it's too firm, microwave it for a few seconds to soften it.
  • Orange blossom water — Use a high-quality orange blossom water to achieve the authentic flavor. Adjust the amount according to your preference for the floral note.

Tips & Tricks

  • If you don't have a calisson mold, you can use a knife to cut out the shapes freehand.
  • For a festive touch, sprinkle some edible gold dust on top of the calissons before the icing sets.
  • Store the calissons in an airtight container at room temperature for up to a week.

Serving advice

Serve the almond calissons on a decorative platter or in small paper cups. They make a delightful addition to afternoon tea or as a sweet treat after a French-inspired meal.
