Treat your ingredients with care...
- Potatoes — Make sure to cut the potatoes into evenly sized chunks to ensure they cook evenly. Be careful not to overcook them, as they can become mushy.
- Cabbage — Finely shred the cabbage to ensure it cooks quickly and evenly. Remove any tough stems before cooking.
- Green onions — Slice the green onions thinly, including both the white and green parts, for a balanced flavor in the dish.
Tips & Tricks
- For extra creaminess, add a dollop of sour cream or cream cheese to the mashed potatoes.
- To add a smoky flavor, cook the cabbage with a few slices of bacon and crumble them into the dish before serving.
- Experiment with different herbs and spices such as thyme or nutmeg to enhance the flavors of the colcannon.
- Leftover colcannon can be transformed into delicious potato cakes by shaping them into patties and frying them until golden brown.
- Serve colcannon as a side dish with grilled sausages or roasted chicken for a complete meal.
