Preparation

  1. 1.
Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are tender when pierced with a fork, about 15-20 minutes.
  2. 2.
While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the shredded cabbage and cook until wilted and tender, about 8-10 minutes. Stir occasionally to prevent burning. Remove from heat and set aside.
  3. 3.
Drain the cooked potatoes and return them to the pot. Add the remaining 2 tablespoons of butter and milk. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
  4. 4.
Stir in the sautéed cabbage and sliced green onions into the mashed potatoes until well combined.
  5. 5.
Serve the Irish Colcannon hot as a side dish with your favorite main course.

Treat your ingredients with care...

  • Potatoes — Make sure to cut the potatoes into evenly sized chunks to ensure they cook evenly. Be careful not to overcook them, as they can become mushy.
  • Cabbage — Finely shred the cabbage to ensure it cooks quickly and evenly. Remove any tough stems before cooking.
  • Green onions — Slice the green onions thinly, including both the white and green parts, for a balanced flavor in the dish.

Tips & Tricks

  • For extra creaminess, add a dollop of sour cream or cream cheese to the mashed potatoes.
  • To add a smoky flavor, cook the cabbage with a few slices of bacon and crumble them into the dish before serving.
  • Experiment with different herbs and spices such as thyme or nutmeg to enhance the flavors of the colcannon.
  • Leftover colcannon can be transformed into delicious potato cakes by shaping them into patties and frying them until golden brown.
  • Serve colcannon as a side dish with grilled sausages or roasted chicken for a complete meal.

Serving advice

Serve the Irish Colcannon as a side dish alongside traditional Irish mains such as corned beef, Irish stew, or roasted lamb. It can also be enjoyed on its own as a comforting and satisfying vegetarian dish.
