Preparation

  1. 1.
Preheat the oven to 400°F (200°C).
  2. 2.
Bring a large pot of salted water to a boil. Add the lobsters and cook for about 8-10 minutes until they turn bright red.
  3. 3.
Remove the lobsters from the pot and let them cool slightly. Once cooled, crack the shells and remove the meat, keeping the claws intact for presentation.
  4. 4.
In a large skillet, melt the butter over medium heat. Add the lobster meat and sauté for 2-3 minutes until heated through.
  5. 5.
Remove the lobster meat from the skillet and set aside.
  6. 6.
Deglaze the skillet with Irish whiskey, stirring to scrape up any browned bits. Allow the whiskey to reduce for a minute.
  7. 7.
Reduce the heat to low and add the heavy cream and Dijon mustard to the skillet. Stir well to combine.
  8. 8.
Simmer the sauce gently for about 5 minutes until it thickens slightly. Season with salt and pepper to taste.
  9. 9.
Return the lobster meat to the skillet and toss gently to coat it with the sauce.
  10. 10.
Transfer the lobster and sauce to a baking dish and bake in the preheated oven for 5-7 minutes until the lobster is fully heated and the sauce is bubbly.
  11. 11.
Garnish with fresh parsley and serve hot.
