Preparation

  1. 1.
In a large mixing bowl, combine the flour and granulated sugar. Add the cold cubed butter and use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.
  2. 2.
Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. 3.
Preheat the oven to 180°C (350°F).
  4. 4.
On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess.
  5. 5.
In a separate bowl, whisk together the melted butter, brown sugar, eggs, and whiskey until well combined.
  6. 6.
Sprinkle the chopped walnuts and raisins evenly over the bottom of the tart shell. Pour the butter mixture over the nuts and raisins.
  7. 7.
Bake the tart in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown.
  8. 8.
Allow the tart to cool completely before serving.

Treat your ingredients with care...

  • Walnuts — Toast the walnuts in a dry skillet over medium heat for a few minutes until fragrant. This will enhance their flavor and add a nice crunch to the tart.

Tips & Tricks

  • For a richer flavor, you can substitute the whiskey with dark rum or brandy.
  • If you prefer a smoother texture, you can pulse the walnuts and raisins in a food processor before adding them to the tart shell.
  • Serve the Ecclefechan Butter Tart warm with a scoop of vanilla ice cream for an extra indulgent treat.
  • If you don't have a tart pan, you can use a pie dish instead. Adjust the baking time accordingly.
