Preparation
-
1.In a large mixing bowl, combine the flour and granulated sugar. Add the cold cubed butter and use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.
-
2.Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
-
3.Preheat the oven to 180°C (350°F).
-
4.On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess.
-
5.In a separate bowl, whisk together the melted butter, brown sugar, eggs, and whiskey until well combined.
-
6.Sprinkle the chopped walnuts and raisins evenly over the bottom of the tart shell. Pour the butter mixture over the nuts and raisins.
-
7.Bake the tart in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown.
-
8.Allow the tart to cool completely before serving.
Treat your ingredients with care...
- Walnuts — Toast the walnuts in a dry skillet over medium heat for a few minutes until fragrant. This will enhance their flavor and add a nice crunch to the tart.
Tips & Tricks

- If you prefer a smoother texture, you can pulse the walnuts and raisins in a food processor before adding them to the tart shell.
- Serve the Ecclefechan Butter Tart warm with a scoop of vanilla ice cream for an extra indulgent treat.
- If you don't have a tart pan, you can use a pie dish instead. Adjust the baking time accordingly.
