In this IONA-inspired version, we incorporate flavors and ingredients commonly found in the cuisines of the Islands of the North Atlantic. This includes the addition of smoked fish or seafood, which adds a distinct smoky flavor to the dish. The original Elarji recipe is traditionally made with Georgian cheese, but in this adaptation, we use local cheeses from the IONA region to infuse the porridge with a unique island taste.
