Ingredients

In this Hyderabadi adaptation, we infuse the dough with cardamom and saffron, which are commonly used in Hyderabadi cuisine. The filling includes finely chopped pistachios, adding a nutty element to the rolls. The baking process remains the same, resulting in a similar texture and appearance to the original Franzbrötchen. We alse have the original recipe for Franzbrötchen, so you can check it out.

Preparation

  1. 1.
In a small bowl, combine the warm milk and saffron strands. Let it sit for 5 minutes to infuse the milk with saffron flavor.
  2. 2.
In a large mixing bowl, combine the flour, ground cardamom, salt, and granulated sugar.
  3. 3.
In a separate small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
  4. 4.
Add the yeast mixture, saffron-infused milk, and melted butter to the dry ingredients. Mix until a soft dough forms.
  5. 5.
Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  6. 6.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.
  7. 7.
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  8. 8.
Punch down the risen dough and roll it out into a rectangle of about 1/4 inch thickness.
  9. 9.
Spread the softened butter evenly over the dough.
  10. 10.
In a small bowl, mix together the granulated sugar, ground cinnamon, and finely chopped pistachios. Sprinkle this mixture over the buttered dough.
  11. 11.
Starting from one long side, tightly roll the dough into a log shape.
  12. 12.
Cut the log into 1-inch thick slices and place them on the prepared baking sheet.
  13. 13.
Bake for 20-25 minutes or until the rolls are golden brown.
  14. 14.
Remove from the oven and let them cool slightly before serving.
