Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large, oven-safe pot, heat the olive oil over medium heat. Add the diced venison, pheasant, and rabbit, and cook until browned on all sides. Remove the meats from the pot and set aside.

3.In the same pot, add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are softened.

4.Return the browned meats to the pot and add the red wine, beef or game stock, tomato paste, thyme, rosemary, bay leaf, and crushed juniper berries. Season with salt and pepper to taste.

5.Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven. Cook for 2-3 hours, or until the meats are tender and the flavors have melded together.

6.Remove the pot from the oven and allow the filling to cool slightly.

7.Increase the oven temperature to 200°C (400°F).

8.Roll out the puff pastry on a lightly floured surface to fit the size of your pie dish.

9.Transfer the cooled filling into the pie dish and cover it with the rolled-out puff pastry. Trim any excess pastry and crimp the edges to seal.

10.Brush the pastry with the beaten egg wash.

11.Make a few small slits on the top of the pastry to allow steam to escape during baking.

12.Place the pie dish on a baking sheet and bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and crisp.
