1.In a medium bowl, whisk together the egg yolks and sugar until pale and creamy.

2.In a saucepan, combine the milk, cream, vanilla bean, and salt. Heat over medium heat until it reaches a gentle simmer.

3.Slowly pour the hot milk mixture into the egg yolks, whisking constantly to prevent curdling.

4.Return the mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon, until it thickens and coats the back of the spoon. This should take about 8-10 minutes.

5.Remove the saucepan from heat and strain the custard through a fine-mesh sieve to remove any lumps and the vanilla bean.

6.Allow the custard to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
