Ingredients
In this Icelandic version, we substitute the traditional heavy cream used in Italian gelato with Skyr, a traditional Icelandic dairy product. Skyr adds a unique tanginess and creaminess to the gelato, giving it a distinct Icelandic twist. Additionally, we incorporate Icelandic vanilla, known for its delicate flavor, to enhance the taste profile of the gelato. Preparation

1.In a medium saucepan, combine Skyr, milk, and half of the sugar. Heat over medium-low heat, stirring occasionally, until the mixture reaches a gentle simmer.

2.In a separate bowl, whisk together the remaining sugar and egg yolks until pale and creamy.

3.Slowly pour the hot Skyr mixture into the egg yolk mixture, whisking constantly to prevent curdling.

4.Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon. Do not let it boil.

5.Remove the saucepan from heat and stir in the vanilla bean seeds. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

6.Once chilled, remove the vanilla bean and pour the mixture into an ice cream maker. Churn according to the manufacturer's instructions until the gelato reaches a soft, creamy consistency.

7.Transfer the gelato to a lidded container and freeze for at least 2 hours to firm up before serving.
