In the original Nigerian Gizdodo recipe, the dish is typically made with chicken gizzards and plantains cooked in a spicy tomato and bell pepper sauce. However, in this adapted Yamal version, we replace the chicken gizzards with tender pieces of chicken and incorporate traditional Yamal ingredients to infuse the dish with the flavors of the target cuisine. Preparation

1.Heat the vegetable oil in a large pan over medium heat.

2.Add the chopped onion, minced garlic, and grated ginger to the pan. Sauté until the onion becomes translucent.

3.Add the diced bell peppers and tomatoes to the pan. Cook until the vegetables soften.

4.Season the chicken pieces with paprika, thyme, curry powder, salt, and pepper. Add the seasoned chicken to the pan and cook until it is browned on all sides.

5.Add the cubed yam to the pan and stir well to coat it with the sauce. Cover the pan and let it simmer for about 15 minutes, or until the yam is tender.

6.In a separate pan, heat some oil and fry the sliced plantains until they turn golden brown and crispy. Remove from the pan and set aside.

7.Once the yam is cooked, add the fried plantains to the pan and gently mix them with the other ingredients.
