Preparation

1.Heat vegetable oil in a pan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.

2.Add grated ginger and chopped green chilies. Sauté for a minute.

3.Add the gooseberries and cook for 5-7 minutes until they soften.

4.Add jaggery, turmeric powder, red chili powder, and salt. Mix well.

5.Cook the mixture for another 10-12 minutes until the gooseberries are completely cooked and the chutney thickens.

6.Remove from heat and let it cool.

7.Transfer the mixture to a blender and blend until smooth. Add water as needed to achieve the desired consistency.
