Preparation

1.In a mixing bowl, combine the all-purpose flour and ghee. Rub the ghee into the flour until it resembles breadcrumbs.

2.Gradually add water and knead the dough until it comes together. Cover the dough with a damp cloth and let it rest for 30 minutes.

3.In a separate bowl, mix together the khoya, powdered sugar, chopped nuts, cardamom powder, and soaked saffron. Set aside.

4.Divide the dough into small portions and roll each portion into a thin circle.

5.Place a spoonful of the filling in the center of each circle. Fold the circle in half, sealing the edges by pressing firmly or using a fork to create a decorative pattern.

6.Heat vegetable oil in a deep pan for frying. Once the oil is hot, carefully add the gujiyas and fry them on medium heat until golden brown.

7.Remove the fried gujiyas from the oil and drain them on a paper towel to remove excess oil.

8.Serve the gujiyas warm, sprinkled with powdered sugar.
