1.In a saucepan, combine the sugar and water. Heat over medium heat until the sugar dissolves completely, stirring occasionally.

3.Once the sugar syrup reaches 121°C (250°F) on a candy thermometer, remove it from the heat.

5.Increase the mixer speed to high and continue whisking until the meringue reaches stiff peaks and the bowl feels cool to the touch.
