Preparation

  1. 1.
In a pan, cook the bacon until crispy. Remove the bacon from the pan and set aside, leaving the bacon fat in the pan.
  2. 2.
In the same pan, sauté the onion and garlic in the bacon fat until translucent.
  3. 3.
In a large bowl, mash the boiled potatoes until smooth.
  4. 4.
Add the cooked bacon, sautéed onion and garlic, salt, black pepper, nutmeg, and flour to the mashed potatoes. Mix well until all the ingredients are combined.
  5. 5.
Divide the dough into small portions and shape them into dumplings.
  6. 6.
Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for about 10 minutes or until they float to the surface.
  7. 7.
Remove the dumplings from the water using a slotted spoon and serve them hot with lingonberry jam and melted butter.

Treat your ingredients with care...

  • Potatoes — Make sure to use starchy potatoes like Russet or Yukon Gold for the best texture.
  • Lingonberry jam — If lingonberry jam is not available, cranberry sauce can be used as a substitute.

Tips & Tricks

  • To enhance the flavor, you can add a pinch of dried thyme or parsley to the dumpling dough.
  • Serve the Kainuun Rönttönen with a side of pickled cucumbers for a refreshing contrast.
  • Leftover dumplings can be pan-fried in butter for a delicious crispy exterior.
