1.In a large pot, combine the vinegar, coconut milk, and water. Bring to a boil over medium heat.

2.Add the meat or seafood, onion, garlic, and ginger to the pot. Simmer for 15 minutes or until the meat is cooked through.

3.Stir in the pineapple chunks, mango chunks, fish sauce, and brown sugar. Season with salt and pepper to taste.

4.Continue to simmer for another 5 minutes to allow the flavors to meld together.

5.Remove from heat and garnish with fresh cilantro.
