Preparation

1.In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Gradually add warm water and knead until a smooth dough forms. Cover the dough and let it rest for 30 minutes.

2.In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

3.Add the ground cumin, ground coriander, ground turmeric, ground paprika, ground cinnamon, and cayenne pepper (if using) to the skillet. Stir well to combine the spices with the onions and garlic.

4.Add the diced tomato, bell pepper, and cooked chickpeas to the skillet. Cook for 5-7 minutes, until the vegetables are tender.

5.Season the mixture with salt and pepper to taste.

6.Divide the dough into small balls and roll each ball into a thin circle.

7.Heat a non-stick pan over medium heat and cook each circle of dough for 2-3 minutes on each side, until lightly browned.

8.Place the cooked Kitcha on a serving plate and top it with the spiced vegetable mixture.

9.Garnish with fresh cilantro and serve hot.
