Ingredients
In the original Swedish cuisine, Klenät is a deep-fried pastry made with wheat flour, eggs, and milk. However, in this Burmese Chinese adaptation, we have replaced the wheat flour with rice flour to give it a lighter and crispier texture. Preparation

1.In a large mixing bowl, combine the rice flour, all-purpose flour, baking powder, salt, turmeric, cumin, coriander, white pepper, and chili powder (if using).

2.Gradually add water to the dry ingredients while whisking continuously until a smooth batter is formed. The consistency should be similar to pancake batter.

3.Heat vegetable oil in a deep pan or pot for frying. The oil should be at least 2 inches deep.

4.Once the oil is hot, drop spoonfuls of the batter into the oil, making sure not to overcrowd the pan.

5.Fry the fritters until they turn golden brown and crispy, flipping them occasionally for even cooking. This should take about 3-4 minutes per batch.

6.Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
