Ingredients
In this adaptation, the traditional Polish Kopytka is transformed into a Caribbean delight by incorporating Antiguan and Barbudan flavors. The original recipe is modified by adding local herbs and spices such as thyme, allspice, and scotch bonnet pepper. 1.In a large mixing bowl, combine the mashed potatoes, flour, coconut milk, water, thyme, allspice, black pepper, salt, and scotch bonnet pepper (if using). Mix until well combined.

2.Dust a clean surface with flour and transfer the dough onto it. Knead the dough for about 5 minutes until it becomes smooth and elastic.

3.Divide the dough into small portions and roll each portion into a long rope, about 1/2 inch (1.3cm) in diameter.

4.Cut the ropes into small pieces, approximately 1 inch (2.5cm) in length.

5.Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water and cook for about 5 minutes, or until they float to the surface.

6.Using a slotted spoon, remove the dumplings from the water and transfer them to a serving dish.
