1.Preheat the oven to 180°C (350°F).

2.Cook the lasagne sheets according to package instructions until al dente. Drain and set aside.

3.In a large pot, bring the vegetable broth to a boil. Add the cauliflower florets and cook until tender. Drain, reserving the broth.

4.In a separate pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

5.Add the mushrooms, carrots, parsnips, thyme, and rosemary to the pan. Cook until the vegetables are tender and any excess liquid has evaporated.

6.In a blender, combine the cooked cauliflower, oat milk, and a splash of the reserved vegetable broth. Blend until smooth and creamy. Season with salt and pepper.

7.In a baking dish, spread a thin layer of the cauliflower puree. Top with a layer of lasagne sheets, followed by a layer of the vegetable mixture. Repeat the layers until all the ingredients are used, finishing with a layer of cauliflower puree.
