1.In a medium saucepan, combine the milk, sugar, cinnamon stick, and vanilla extract. Heat over medium heat until the mixture comes to a gentle simmer, stirring occasionally.

2.In a separate bowl, whisk the egg yolks until smooth. Slowly pour a ladleful of the hot milk mixture into the egg yolks, whisking constantly to temper the yolks and prevent them from curdling.

3.Gradually pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture, whisking constantly.

4.Continue to cook the custard over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 10-15 minutes.

5.Remove the saucepan from heat and discard the cinnamon stick. Pour the custard into individual serving dishes or ramekins.

6.Allow the custard to cool to room temperature, then refrigerate for at least 2 hours, or until set.
