Preparation

1.Rinse the lentils under cold water and set aside.

2.In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté until the vegetables are softened.

3.Add the lentils, diced tomatoes, vegetable broth, dried oregano, dried thyme, bay leaf, salt, and pepper to the pot. Stir well to combine.

4.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 45 minutes to 1 hour, or until the lentils are tender.

5.Remove the bay leaf and adjust the seasoning if needed.
