Litti Chokha is a traditional dish from the Indian cuisine, specifically from the state of Bihar. It consists of roasted wheat balls (litti) served with a spicy mashed potato and eggplant mixture (chokha). This recipe adds a twist to the traditional method by baking the litti for a smoky flavor.

Preparation

    - Preheat the oven to 180°C (350°F).

    - In a mixing bowl, combine the whole wheat flour, ghee, carom seeds, and salt. Mix well.

    - Gradually add yogurt and knead the mixture into a firm dough. If needed, add water to adjust the consistency.

    - Divide the dough into small portions and shape them into balls.

    - Place the litti on a baking tray and bake for 25-30 minutes or until golden brown.

    - In the meantime, heat mustard oil in a pan and add cumin seeds. Let them splutter.

    - Add chopped onions and sauté until golden brown.

    - Add mashed potatoes, roasted eggplant, roasted tomatoes, green chilies, turmeric powder, red chili powder, and salt. Mix well.

    - Cook the mixture for 5-7 minutes, stirring occasionally.

    - Remove the litti from the oven and serve hot with the chokha.

    - Garnish with fresh coriander leaves.

  • Yogurt — Use thick yogurt for the dough to achieve the desired consistency. Greek yogurt works well too.
