Preparation

1.- Preheat the oven to 180°C (350°F).

2.- In a mixing bowl, combine the whole wheat flour, ghee, carom seeds, and salt. Mix well.

3.- Gradually add yogurt and knead the mixture into a firm dough. If needed, add water to adjust the consistency.

4.- Divide the dough into small portions and shape them into balls.

5.- Place the litti on a baking tray and bake for 25-30 minutes or until golden brown.

6.- In the meantime, heat mustard oil in a pan and add cumin seeds. Let them splutter.

7.- Add chopped onions and sauté until golden brown.

8.- Add mashed potatoes, roasted eggplant, roasted tomatoes, green chilies, turmeric powder, red chili powder, and salt. Mix well.

9.- Cook the mixture for 5-7 minutes, stirring occasionally.

10.- Remove the litti from the oven and serve hot with the chokha.

11.- Garnish with fresh coriander leaves.
