Preparation

1.Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.

2.Add chopped onions and sauté until golden brown.

3.Add minced garlic, grated ginger, and slit green chilies. Sauté for a minute.

4.Add the mutton pieces and cook until they are browned on all sides.

5.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

6.Pour in the tomato puree and cook for a few minutes until the oil separates.

7.Add enough water to cover the mutton pieces. Bring to a boil, then reduce the heat to low, cover the pan, and simmer for about 1.5 to 2 hours or until the mutton is tender.
