Preparation

1.In a large bowl, combine the pork mince, minced garlic, chopped lemongrass, cilantro, fish sauce, soy sauce, ground coriander, ground cumin, turmeric powder, and chili flakes. Mix well until all the ingredients are evenly incorporated.

2.Take a small portion of the pork mixture and shape it into a small sausage-like shape around a soaked bamboo skewer. Repeat with the remaining mixture and skewers.

3.Preheat the grill to medium-high heat. Place the pork skewers on the grill and cook for about 8-10 minutes, turning occasionally, until they are cooked through and slightly charred.

4.While the skewers are grilling, prepare the spicy dipping sauce. In a small bowl, combine the chopped red chilies, lime juice, fish sauce, and sugar. Stir until the sugar is dissolved.
