Preparation

  1. 1.
Preheat the oven to 180°C (350°F).
  2. 2.
In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  3. 3.
Add the minced beef and lamb to the pan, breaking it up with a wooden spoon. Cook until browned.
  4. 4.
Stir in the dried thyme, dried rosemary, paprika, salt, and pepper. Cook for an additional 2 minutes to allow the flavors to meld.
  5. 5.
Remove the pan from heat and let the mixture cool slightly.
  6. 6.
Roll out two-thirds of the shortcrust pastry and line a greased pie dish with it.
  7. 7.
Sprinkle half of the grated cheddar cheese over the pastry base.
  8. 8.
Spoon the cooled meat mixture over the cheese, spreading it evenly.
  9. 9.
Sprinkle the remaining grated cheddar cheese over the meat mixture.
  10. 10.
Roll out the remaining pastry and cover the pie, sealing the edges. Cut a small slit in the center to allow steam to escape.
  11. 11.
Brush the top of the pie with beaten egg wash.
  12. 12.
Bake in the preheated oven for 40-45 minutes, or until the pastry is golden brown and crisp.
  13. 13.
Allow the pie to cool for a few minutes before serving.

Treat your ingredients with care...

  • Shortcrust pastry — Ensure the pastry is chilled before rolling it out to achieve a flaky texture.
  • Minced beef and lamb — Use lean mince for a healthier option, or a combination of lean and regular mince for added flavor.
  • Cheddar cheese — Opt for a mature cheddar for a stronger flavor in the pie.

Tips & Tricks

  • For a twist, add a tablespoon of Worcestershire sauce to the meat mixture for an extra depth of flavor.
  • Serve the pie with a side of mashed potatoes and steamed vegetables for a complete meal.
  • If short on time, store-bought shortcrust pastry can be used as a convenient alternative.
  • Experiment with different types of cheese, such as blue cheese or smoked cheddar, to add a unique twist to the pie.
  • Leftover pie can be reheated in the oven for a few minutes to regain its crispness.

Serving advice

Serve the Mince and Cheese Pie hot, straight from the oven, accompanied by a dollop of tangy tomato chutney or a side of mixed greens for a balanced meal.

Presentation advice

Present the Mince and Cheese Pie on a rustic wooden board, allowing the golden crust to take center stage. Cut into generous slices to showcase the layers of meat and cheese filling.
