1.Preheat the oven to 400°F (200°C).

2.Cut off the top of the garlic head to expose the cloves. Drizzle with a teaspoon of olive oil and wrap in aluminum foil. Roast in the preheated oven for 30 minutes or until the garlic cloves are soft and golden.

3.Allow the roasted garlic to cool slightly, then squeeze the cloves out of their skins into a blender or food processor.

4.Add the remaining olive oil, lime juice, cumin, oregano, salt, black pepper, and chili flakes (if using) to the blender. Blend until smooth and well combined.
