Preparation

    In a large mixing bowl, combine the whole wheat flour, chickpea flour, semolina, grated carrots, chopped spinach, fenugreek leaves, sesame seeds, grated coconut, ginger paste, green chili paste, turmeric powder, red chili powder, cumin seeds, baking soda, lemon juice, and salt. Mix well to form a firm dough.

    Divide the dough into small portions and shape each portion into cylindrical logs.

    Grease a steamer or a large pot with oil and place the Muthia logs in it.

    Steam the Muthia over medium heat for about 20-25 minutes or until cooked through. Insert a toothpick into the Muthia to check if they are done. If the toothpick comes out clean, they are ready.

    Once cooked, remove the Muthia from the steamer and let them cool slightly.

    Cut the Muthia logs into bite-sized pieces and serve hot with your favorite chutney or yogurt.
