The original recipe typically uses a filling of ground almonds, sugar, and cardamom. However, in the Gujarati version, the filling incorporates roasted nuts, desiccated coconut, jaggery, and cardamom, adding a unique twist to the dish. Preparation

1.In a mixing bowl, combine the all-purpose flour, ghee, yogurt, and salt. Mix well until the dough comes together.

2.Gradually add water, a little at a time, and knead the dough until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for 30 minutes.

3.In a separate bowl, mix together the roasted nuts, desiccated coconut, jaggery, and cardamom powder to prepare the filling.

4.Divide the dough into small portions and roll each portion into a thin circle.

5.Place a spoonful of the filling in the center of each dough circle. Fold the dough over the filling to form a semi-circle and seal the edges by pressing them together.

6.Heat vegetable oil in a deep pan or kadai for frying. Once the oil is hot, carefully place the Qottab pastries in the oil and fry them until golden brown and crispy.

7.Remove the fried Qottab from the oil and drain them on a paper towel to remove excess oil.

8.Serve the Gujarati Qottab warm or at room temperature as a delightful sweet and spiced treat.
