Preparation

  1. 1.
In a large mixing bowl, combine the grated zucchini, carrot, and cabbage.
  2. 2.
Add the chickpea flour, whole wheat flour, desiccated coconut, coconut milk, pineapple juice, fresh coriander, fresh mint, grated ginger, minced garlic, ground cumin, ground coriander, turmeric powder, red chili powder, baking soda, and salt. Mix well to form a thick batter.
  3. 3.
Grease a steamer tray with oil.
  4. 4.
Take a small portion of the batter and shape it into a cylindrical dumpling (muthia) using your hands.
  5. 5.
Place the muthia on the greased steamer tray, leaving some space between each dumpling.
  6. 6.
Steam the muthia for 15-20 minutes or until cooked through. Insert a toothpick into a muthia, and if it comes out clean, they are ready.
  7. 7.
Once cooked, remove the muthia from the steamer and let them cool slightly.
  8. 8.
Cut the muthia into bite-sized pieces and serve warm.

Treat your ingredients with care...

  • Zucchini — Make sure to squeeze out any excess moisture from the grated zucchini before adding it to the batter to prevent the muthia from becoming too wet.
  • Chickpea flour — Use fine chickpea flour for a smoother texture in the muthia.
  • Coconut milk — Shake the can of coconut milk well before measuring to ensure an even consistency.

Tips & Tricks

  • If you prefer a spicier muthia, increase the amount of red chili powder according to your taste.
  • Serve the muthia with a tangy tamarind chutney or a cooling mint yogurt dip for added flavor.
  • You can customize the vegetables in the muthia according to your preference. Try adding grated beetroot or spinach for a colorful twist.
  • Leftover muthia can be refrigerated and enjoyed the next day. Reheat them in a steamer or microwave before serving.
  • For a festive touch, garnish the muthia with a sprinkle of desiccated coconut and fresh mint leaves.
