Preparation

1.In a large mixing bowl, combine the grated zucchini, carrot, and cabbage.

2.Add the chickpea flour, whole wheat flour, desiccated coconut, coconut milk, pineapple juice, fresh coriander, fresh mint, grated ginger, minced garlic, ground cumin, ground coriander, turmeric powder, red chili powder, baking soda, and salt. Mix well to form a thick batter.

3.Grease a steamer tray with oil.

4.Take a small portion of the batter and shape it into a cylindrical dumpling (muthia) using your hands.

5.Place the muthia on the greased steamer tray, leaving some space between each dumpling.

6.Steam the muthia for 15-20 minutes or until cooked through. Insert a toothpick into a muthia, and if it comes out clean, they are ready.

7.Once cooked, remove the muthia from the steamer and let them cool slightly.

8.Cut the muthia into bite-sized pieces and serve warm.
