1.In a large pot, heat the vegetable oil over medium heat. Add the sliced onion, minced garlic, lemongrass, ginger, and red chilies. Sauté until fragrant.

2.Add the fish stock, coconut milk, soy sauce, and fish sauce to the pot. Bring to a simmer and let it cook for 10 minutes to allow the flavors to meld together.

3.Add the fugu fish fillets to the pot and cook for 5-7 minutes, or until the fish is cooked through and tender.

4.Remove the fish from the pot and set aside. Strain the broth to remove the lemongrass, ginger, and chilies.

5.Return the strained broth to the pot and bring it back to a simmer. Add the carrot, red bell pepper, and snow peas. Cook for 2-3 minutes, or until the vegetables are tender-crisp.

6.Stir in the lime juice and season with salt and pepper to taste.
