Preparation

  1. 1.
In a mixing bowl, combine the rice flour, coconut milk, water, and salt. Stir until well combined and smooth.

In a small saucepan, heat the palm sugar and pandan leaves over low heat until the sugar has melted and formed a syrup. Remove from heat and discard the pandan leaves.
  3. 3.
Grease a square or rectangular steaming dish with oil. Pour half of the rice flour mixture into the dish and steam over medium heat for 10 minutes.
  4. 4.
Remove the dish from the steamer and pour the palm sugar syrup evenly over the partially cooked rice flour layer. Pour the remaining rice flour mixture on top.
  5. 5.
Return the dish to the steamer and steam for another 20 minutes or until the rice flour is cooked through and set.
  6. 6.
Once cooked, remove from the steamer and allow it to cool completely before cutting into bite-sized pieces.
  7. 7.
Serve Nagasari chilled or at room temperature.

Treat your ingredients with care...

  • Rice flour — Ensure that the rice flour is finely ground for a smooth texture in the Nagasari.
  • Coconut milk — Use full-fat coconut milk for a rich and creamy flavor.
  • Palm sugar — If palm sugar is not available, you can substitute it with brown sugar or another natural sweetener.

Tips & Tricks

  • To enhance the aroma of Nagasari, you can add a few drops of pandan essence to the rice flour mixture.
  • For a more indulgent version, serve Nagasari with a scoop of coconut ice cream or a drizzle of coconut cream.
  • If you prefer a sweeter dessert, you can increase the amount of palm sugar in the syrup.
