Preparation

1.In a large pot, heat the palm oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

2.Add the cow tripe, liver, and kidney to the pot, and cook until browned on all sides.

3.Sprinkle the Nigerian curry powder, thyme, and bay leaves over the offal, and stir well to coat.

4.Add the chopped scotch bonnet peppers and tomatoes to the pot, and cook for a few minutes until the tomatoes soften.

5.Pour in the beef stock, and season with salt and pepper to taste. Stir everything together.

6.Reduce the heat to low, cover the pot, and simmer for about 1 hour, or until the offal is tender and cooked through.

7.Once cooked, remove the bay leaves from the soup.

8.Serve the Nigerian Offal Soup hot, garnished with fresh cilantro.
