Preparation

    Heat vegetable oil in a pan over medium heat.

    Add mustard seeds and let them splutter.

    Add cumin seeds, coriander powder, red chili powder, turmeric powder, and asafoetida. Sauté for a minute until fragrant.

    Add diced papaya and mix well. Cook for 5 minutes until the papaya softens slightly.

    Add tamarind pulp, jaggery or brown sugar, lemon juice, and salt. Mix well.

    Reduce the heat to low and simmer for 10-15 minutes until the chutney thickens.

    Remove from heat and let it cool.

    Transfer the chutney to a blender or food processor and blend until smooth.
