Preparation

1.Heat vegetable oil in a pan over medium heat.

2.Add mustard seeds and let them splutter.

3.Add cumin seeds, coriander powder, red chili powder, turmeric powder, and asafoetida. Sauté for a minute until fragrant.

4.Add diced papaya and mix well. Cook for 5 minutes until the papaya softens slightly.

5.Add tamarind pulp, jaggery or brown sugar, lemon juice, and salt. Mix well.

6.Reduce the heat to low and simmer for 10-15 minutes until the chutney thickens.

7.Remove from heat and let it cool.

8.Transfer the chutney to a blender or food processor and blend until smooth.

9.Serve chilled or at room temperature.
